Hello! I'm still "weight-watching"... unfortunately I watched my weight go up two pounds in the last few weeks. I'm not giving up, though! How is everyone else doing?

Meghan's mom sent me this recipe and I think I'm going to try it TODAY! It looks so simple and yummy. Perfect way to get your veggies.

CHEEZY VEGETABLE SOUP

2 cans FF chicken broth

1 lg pkg frozen veggies  ( I used California Blend because that is what I had on hand)

8 oz lowfat Velveeta

 

Heat broth til boiling, add frozen veggies, add velveeta at end just to melt.

 

1 cup = 1 point

Welcome to my Weight Watchers site!

I thought it would be fun to have all my favorite recipes, tips, tricks, etc, in one place. And I'm also hoping to receive input from other people who are doing WW, or just watching their weight with another program! Disclaimer: This is by no means an official website for Weight Watchers and if you'd like to find more information about joining, please visit www.weightwatchers.com.

My WW adventure started on February 20, 2007 (Fat Tuesday). I have lost a total of 8.2 pounds and I'm in my 5th week now. I am not giving up and my goal is to lose about 45-50 more pounds.

I found this recipe here. Made it tonight and YUMMY, it is so great. I used Snickers instead, though, because I am not a Heath or Score fan. It's 4 points for a small piece (must cut the cake into 24 pieces), but so WORTH IT when you're needing something seriously sweet and sinful.

Better Than Sex Cake
(Diet Coke Cake)

Yields: 24 servings | 4 pts per serving

This cake is seriously OUT OF THIS WORLD! This is chocolate devil's food cake, drizzled with a caramel glaze and topped with candy bits & cool whip. You will NOT regret trying this one! Nobody will EVER know that it's low-fat! Please also look at my recipes for the Cherry-Chocolate, Dreamsicle, Pineapple-Coconut, Red Velvet and Lemon versions of this cake!

Ingredients:

  • 1 box Devil's Food Cake mix
  • 10-oz Diet Coke or Diet Pepsi
  • 1 egg white
  • 6-oz fat-free caramel ice cream topping *
  • 7-oz fat-free sweetened condensed milk
  • 1 cup Skor Bar or Heath Bar bits (found by the choc. chips)
  • 1 container fat-free cool whip

    *Note that it might not say "fat-free" on the front of the label, but check the nutritional info on the back. I bet it's fat-free.

Directions:

Mix cake mix, egg white and diet soda. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth in a greased 9x13 pan. During the last few minutes of baking, put caramel and condensed milk in a sauce pan and stir on medium low heat until smooth. Take cake out of oven, and poke holes all over the top. Pour caramel mixture over warm cake, filling in the holes. Sprinkle Heath bits over the top, reserving some for the top. Cool completely. Cover with container of fat-free cool whip and sprinkle with remaining heath bits. Put in fridge until ready to serve.

Yields: 24 servings

Nutritional Info: (per serving) 193 Calories, 5.25 g. fat, 1 g. fiber (4 pts per serving) (If you want to make the cake 3.5 pts per serving, only use 1/2 of the Skor bits)

Chocolate Brownie Crinkles

1 Package Betty Crocker Low Fat Brownie Mix
1/4 Cup Water
1/4 Cup Egg Substitute
Powdered Sugar
Butter Flavored Cooking Spray

Preheat oven to 350 degrees. Mix together all ingredients just until blended. If the dough is too soft, place in the refrigerator until it stiffens up a bit. Use 1 level Tablespoon (measurement) and shape into balls. Roll into powdered sugar. Place on a cookie sheet that has been sprayed with butter flavored cooking spray and bake for 11-13 minutes. Remove promptly to racks to cool.

Serves: 34
Per Serving (excluding unknown items): 62 Calories; 1g Fat (16.0% calories from fat); 1g Protein; 13g Carbohydrate; trace Dietary Fiber; 0mg Cholesterol; 57mg Sodium.  Exchanges: 0 Lean Meat.

Taco Soup

1cup = 2 POINTS

1 lb. lean ground beef (or lean ground turkey)

1 can pinto beans

1 large onion, chopped

1 can chili beans

1 pkg Hidden Valley Ranch Dressing Mix

1 can corn

1 pkg taco seasoning

1 can stewed tomatoes, Mexican style

1 can stewed tomatoes, regular style

Brown meat & onion, then drain. Add dressing and taco seasoning. Add other ingredients without draining. Simmer for one hour.

I got this recipe from my WW meeting (posted on the wall). This was a hit with my entire family, even Max. We love taco soup around here. We topped with fat free sour cream and baked tortilla chips. My husband put cheese on top, but I didn't want to use the points...
